Recipe: Keto Cookies

These cookies are a saviour for fixing those sweet cravings. Especially if you are gluten intolerant. Plus our newest 'cookie roller' adds to the cuteness! Below you can see the ingredient lists and recipe... enjoy lovelies x 

Hazelnut Keto Cookies - ingredients list:

- 100g Soft Butter

- 1/3 cup of Erythirol 

- 1 Egg Yolk

-1/2 tsp Baking Powder

- 1 tsp Vanilla Extract

- A pinch of Sea Salt

- 1 cup Almond Flour

- 1 cup Hazelnut Flour

- Hazelnuts  (for on top)

Preheat the oven to 300 °F (150 °C) and line a baking sheet with parchment paper.
Mix the butter, sweetener, egg yolk, baking powder, vanilla extract, and salt in a bowl. Preferably with an electric mixer. 
Add the nut flour and mix until everything is combined and moist dough forms.
Roll the dough with a rolling pin between 2 sheets of parchment paper until approx. 5-7mm thick.
Remove the top parchment sheet and cut the rough sides of the flattened dough.
Now place the cookie roller at the beginning of the flattened dough and roll over once, pressing down firmly.
Gentle cut between the lines and give some space between the cookies.
Bake in the oven for about 15-20 minutes until golden. Let the cookies cool on the baking sheet for at least 30 minutes before removing them. Whilst hot the cookies will be really soft but will crisp up once they cool down.
